Description
Delicious blueberry cream cheese filled egg rolls, fried to golden perfection.
Ingredients
- 1 cup fresh blueberries
- 4 ounces cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 egg roll wrappers
- Oil for frying (vegetable or canola)
- Powdered sugar for dusting (optional)
Instructions
- In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in the fresh blueberries, being careful not to crush them.
- Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the blueberry cream cheese mixture in the center of the wrapper.
- Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll it up tightly. Seal the top corner with a little water to keep it closed. Repeat with the remaining wrappers and filling.
- Heat about 2 inches of oil in a deep pan over medium heat until it reaches 350°F. Carefully add a few egg rolls at a time, frying them for about 2-3 minutes on each side or until golden brown and crispy.
- Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Dust with powdered sugar if desired.
