Ingredients

  • 1 cup fresh blueberries
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 egg roll wrappers
  • Oil for frying (vegetable or canola)
  • Powdered sugar for dusting (optional)

Instructions

  1. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Gently fold in the fresh blueberries, being careful not to crush them.
  2. Lay an egg roll wrapper on a clean surface with one corner pointing toward you. Place about 2 tablespoons of the blueberry cream cheese mixture in the center of the wrapper.
  3. Fold the bottom corner of the wrapper over the filling, then fold in the sides and roll it up tightly. Seal the top corner with a little water to keep it closed. Repeat with the remaining wrappers and filling.
  4. Heat about 2 inches of oil in a deep pan over medium heat until it reaches 350°F. Carefully add a few egg rolls at a time, frying them for about 2-3 minutes on each side or until golden brown and crispy.
  5. Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil. Dust with powdered sugar if desired.
