Ingredients

  • 2 flatbreads or naan
  • 1 cup fresh blueberries
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
  • Salt and pepper to taste
  • Optional: arugula for topping

Instructions

  1. Preheat your oven to 400°F. Place the flatbreads on a baking sheet.
  2. In a small bowl, mix together the olive oil, honey, balsamic vinegar, thyme, salt, and pepper. Brush this mixture evenly over the flatbreads.
  3. Sprinkle the crumbled goat cheese over the flatbreads, followed by the fresh blueberries.
