A delightful flatbread topped with fresh blueberries and creamy goat cheese, perfect for a light meal or appetizer.
Ingredients
- 2 flatbreads or naan
- 1 cup fresh blueberries
- 4 ounces goat cheese, crumbled
- 1 tablespoon olive oil
- 1 tablespoon honey
- 1 teaspoon balsamic vinegar
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- Salt and pepper to taste
- Optional: arugula for topping
Instructions
- Preheat your oven to 400°F. Place the flatbreads on a baking sheet.
- In a small bowl, mix together the olive oil, honey, balsamic vinegar, thyme, salt, and pepper. Brush this mixture evenly over the flatbreads.
- Sprinkle the crumbled goat cheese over the flatbreads, followed by the fresh blueberries.
- Bake in the preheated oven for 12-15 minutes, or until the flatbreads are golden and the cheese is slightly melted.
- Remove from the oven and let cool for a couple of minutes. If desired, top with fresh arugula before slicing and serving.
Notes
- For a sweeter version, add a sprinkle of brown sugar over the blueberries before baking.
- For a savory twist, incorporate caramelized onions or a drizzle of balsamic glaze after baking.
