Description
A delicious Blueberry Malva Pudding served with a creamy vanilla custard, perfect for dessert lovers.
Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 2 cups whole milk (for custard)
- 1/2 cup heavy cream (for custard)
- 1/4 cup granulated sugar (for custard)
- 2 tablespoons cornstarch (for custard)
- 1 teaspoon vanilla extract (for custard)
- Pinch of salt (for custard)
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8-inch square baking dish.
- In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
- In another bowl, mix the melted butter, milk, eggs, and vanilla extract until combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Gently fold in the blueberries.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- While the pudding is baking, prepare the vanilla custard by combining the milk, heavy cream, sugar, cornstarch, vanilla extract, and salt in a medium saucepan. Whisk together over medium heat until thickened, about 5-7 minutes.
- Remove from heat and let cool slightly.
- Once the pudding is done, let it cool for about 10 minutes before serving. Serve warm with a generous drizzle of vanilla custard over the top.
Notes
- For a lighter version, substitute half the butter with applesauce.
- Add a sprinkle of cinnamon to the batter for extra flavor.
- Swap blueberries for raspberries or chopped strawberries for a different fruit twist.
