Description

Blueberry Pie Bombs are a delicious and easy-to-make dessert that combines the flavors of blueberries and biscuit dough into bite-sized treats.


Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 package (2.5 ounces) refrigerated biscuit dough (8 biscuits)
  • 1 tablespoon butter, melted
  • 1 teaspoon cinnamon
  • 1 tablespoon powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Cook for about 5-7 minutes, stirring occasionally, until the mixture starts to bubble and thicken. Remove from heat and let it cool slightly.
  3. Open the biscuit dough and separate the biscuits. Flatten each biscuit into a circle about 4 inches in diameter.
  4. Place a tablespoon of the blueberry mixture in the center of each biscuit circle.
  5. Fold the edges of the biscuit over the filling, pinching to seal and form a ball.
  6. Place the pie bombs seam-side down on the prepared baking sheet. Brush the tops with melted butter and sprinkle with cinnamon.
  7. Bake for 12-15 minutes or until golden brown.
  8. Remove from the oven and let cool for a few minutes. Dust with powdered sugar before serving.
