Description

Delicious Bourbon BBQ Bacon Cheeseburger Meatball Subs that are perfect for any gathering.


Ingredients

  • 1 pound ground beef
  • 1/2 pound bacon, cooked and crumbled
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup bourbon BBQ sauce (store-bought or homemade)
  • 4 sub rolls
  • 8 slices cheddar cheese
  • Extra BBQ sauce for drizzling

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, combine the ground beef, crumbled bacon, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and black pepper. Mix until just combined; do not overmix.
  3. Form the mixture into meatballs, about 1.5 inches in diameter, and place them on a baking sheet lined with parchment paper.
  4. Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and browned.
  5. In the last 5 minutes of baking, drizzle the meatballs with bourbon BBQ sauce and top each with a slice of cheddar cheese. Return to the oven until the cheese is melted.
  6. While the meatballs are baking, warm the sub rolls in the oven for about 5 minutes.
  7. To assemble the subs, place 3-4 meatballs in each sub roll, drizzle with extra BBQ sauce, and serve immediately.

Notes

  • For a spicier kick, add a teaspoon of cayenne pepper to the meatball mixture.
  • Substitute ground turkey or chicken for a leaner option while maintaining the flavor by using the same spices and BBQ sauce.
