Description

Ingredients

  • 2 medium carrots, peeled and chopped (about 1 cup)
  • 1 cup vegetable oil
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips (for ganache)
  • ½ cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a blender or food processor, combine the chopped carrots, vegetable oil, and eggs. Blend until smooth.
  3. In a large mixing bowl, whisk together the sugar, flour, baking powder, and salt.
  4. Pour the carrot mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared baking pan and smooth the top.
  6. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. While the cake is cooling, prepare the chocolate ganache by combining the chocolate chips and heavy cream in a small saucepan over medium heat. Stir until melted and smooth.
  9. Once the cake is completely cool, pour the chocolate ganache over the top, spreading it evenly.
  10. Allow the ganache to set for about 30 minutes before slicing.
