Ingredients
- 2 large eggs
- 1 medium potato, diced
- 1/2 cup bell pepper, diced

- 1/2 cup cooked sausage or bacon, chopped

Instructions
- Preheat your grill or oven to 400°F.
- Cut four large pieces of aluminum foil, about 12 inches long.
- In a bowl, whisk together the eggs, salt, pepper, garlic powder, and paprika.
- Divide the diced potatoes, bell pepper, onion, and cooked sausage or bacon evenly among the foil pieces.
- Pour the egg mixture over the vegetable and meat mixture on each foil packet.
- Sprinkle cheese on top of each packet.
- Fold the foil over the filling to create a sealed packet, ensuring there are no openings.
- Place the packets on the grill or in the oven and cook for 20-25 minutes, or until the eggs are set and the potatoes are tender.
- Carefully open the packets (watch for steam) and garnish with fresh herbs if desired.

- For a vegetarian option, omit the sausage or bacon and add extra vegetables like spinach or mushrooms.
