Description

Breakfast Foil Packets are a quick and easy recipe that combines eggs, vegetables, and meat, all cooked in a convenient foil packet.

Ingredients

  • 2 large eggs
  • 1 medium potato, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 cup cooked sausage or bacon, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 1 cup shredded cheese (cheddar or your choice)
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your grill or oven to 400°F.
  2. Cut four large pieces of aluminum foil, about 12 inches long.
  3. In a bowl, whisk together the eggs, salt, pepper, garlic powder, and paprika.
  4. Divide the diced potatoes, bell pepper, onion, and cooked sausage or bacon evenly among the foil pieces.
  5. Pour the egg mixture over the vegetable and meat mixture on each foil packet.
  6. Sprinkle cheese on top of each packet.
  7. Fold the foil over the filling to create a sealed packet, ensuring there are no openings.
  8. Place the packets on the grill or in the oven and cook for 20-25 minutes, or until the eggs are set and the potatoes are tender.
  9. Carefully open the packets (watch for steam) and garnish with fresh herbs if desired.

Notes

  • For a vegetarian option, omit the sausage or bacon and add extra vegetables like spinach or mushrooms.
  • You can prepare the packets in advance and refrigerate them until ready to cook for a quick breakfast option.
