Description
A deliciously crunchy twist on the classic Caesar salad, featuring fresh broccoli and a creamy dressing.
Ingredients
- 2 cups fresh broccoli florets
- 1 cup chopped romaine lettuce
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 cup croutons (optional)
- Lemon wedges for serving (optional)
Instructions
- Start by blanching the broccoli florets. Bring a pot of salted water to a boil, add the broccoli, and cook for 2 minutes. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Let it cool for about 5 minutes, then drain again and pat dry.
- In a large mixing bowl, combine the cooled broccoli, chopped romaine lettuce, and halved cherry tomatoes.
- In a small bowl, whisk together the Caesar dressing, garlic powder, and black pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
- Sprinkle the grated Parmesan cheese over the top and add croutons if desired. Toss lightly again.
- Serve immediately with lemon wedges on the side for an extra burst of flavor.
Notes
- For added protein, consider adding grilled chicken or chickpeas to the salad.
- Swap the Caesar dressing for a yogurt-based dressing for a lighter option.
