Description

Ingredients

  • 2 cups cooked, shredded chicken
  • 2 cups broccoli florets (fresh or frozen)
  • 1 cup shredded sharp cheddar cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon olive oil
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed
  • 3/4 cup milk (for dumplings)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
  2. Add the cooked chicken, broccoli florets, chicken broth, milk, thyme, salt, black pepper, and cayenne pepper (if using) to the pot. Bring to a simmer and cook for about 10 minutes, allowing the broccoli to become tender.
  3. While the mixture is simmering, prepare the dumplings. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in 3/4 cup milk until just combined.
  4. Once the chicken and broccoli mixture is simmering, drop spoonfuls of the dumpling batter onto the surface of the soup. Cover the pot with a lid and let the dumplings steam for about 15 minutes without lifting the lid.
  5. After 15 minutes, sprinkle the shredded cheddar cheese over the dumplings and cover again for an additional 5 minutes until the cheese is melted and the dumplings are cooked through.
  6. Serve hot, garnished with additional cheese if desired.

Notes

  • For a lighter version, use low-fat milk and reduce the cheese.
