Ingredients
- 2 cups cooked, shredded chicken
- 2 cups broccoli florets (fresh or frozen)
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon olive oil
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 cup cold butter, cubed
- 3/4 cup milk (for dumplings)
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute until fragrant.
- Add the cooked chicken, broccoli florets, chicken broth, milk, thyme, salt, black pepper, and cayenne pepper (if using) to the pot. Bring to a simmer and cook for about 10 minutes, allowing the broccoli to become tender.
- While the mixture is simmering, prepare the dumplings. In a mixing bowl, combine flour, baking powder, baking soda, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Stir in 3/4 cup milk until just combined.
- Once the chicken and broccoli mixture is simmering, drop spoonfuls of the dumpling batter onto the surface of the soup. Cover the pot with a lid and let the dumplings steam for about 15 minutes without lifting the lid.
- After 15 minutes, sprinkle the shredded cheddar cheese over the dumplings and cover again for an additional 5 minutes until the cheese is melted and the dumplings are cooked through.
- Serve hot, garnished with additional cheese if desired.
Notes
- For a lighter version, use low-fat milk and reduce the cheese.
- Add other vegetables like carrots or peas for extra color and nutrition.
