Description

Ingredients

  • 2 cups fresh broccoli florets, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 cup milk
  • 2 large eggs
  • ¼ cup vegetable oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a medium bowl, combine the chopped broccoli and shredded cheddar cheese. Set aside.
  3. In a large bowl, whisk together the flour, baking powder, salt, black pepper, and garlic powder.
  4. In another bowl, mix the milk, eggs, and vegetable oil until well combined.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the broccoli and cheese mixture until evenly distributed.
  7. Divide the batter evenly among the muffin cups, filling each about ¾ full.
  8. Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.
  9. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

  • For a healthier option, substitute half of the all-purpose flour with whole wheat flour.
