Description
Broccoli Cheddar Stuffed Chicken is a flavorful dish featuring chicken breasts filled with a creamy mixture of broccoli and cheddar cheese, perfect for a hearty meal.
Ingredients
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1 cup fresh broccoli florets, chopped
- 1 cup shredded sharp cheddar cheese
- 1/2 cup cream cheese, softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/2 teaspoon paprika (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a medium bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
- Stuff each chicken breast with the broccoli and cheese mixture, dividing it evenly among the breasts.
- Secure the openings with toothpicks if necessary to keep the filling inside.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika, if using.
- Sear the chicken breasts in the skillet for about 3-4 minutes on each side until golden brown.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before serving. Remove toothpicks if used.
Notes
- For added flavor, consider adding a teaspoon of Dijon mustard to the cream cheese mixture.
- Substitute the broccoli with spinach or kale for a different green veggie option.
