Ingredients

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 1 cup fresh broccoli florets, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the broccoli and cheese mixture, dividing it evenly among the breasts.
  5. Secure the openings with toothpicks if necessary to keep the filling inside.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt, pepper, and paprika, if using.
  7. Sear the chicken breasts in the skillet for about 3-4 minutes on each side until golden brown.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  9. Remove from the oven and let rest for 5 minutes before serving. Remove toothpicks if used.
