Description

Broccoli Cheddar Stuffed Chicken is a delicious and satisfying dish featuring chicken breasts filled with a creamy mixture of broccoli and cheddar cheese.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 1 cup fresh broccoli florets, chopped
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, combine the chopped broccoli, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Using a sharp knife, carefully create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  4. Stuff each chicken breast with the broccoli and cheese mixture, dividing it evenly between the two breasts.
  5. If using, sprinkle breadcrumbs over the top of each stuffed chicken breast for added crunch.
  6. Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before slicing.

  • For a spicy kick, add a pinch of red pepper flakes to the stuffing mixture.
