Description
Delicious and crispy broccoli cheese patties that are perfect as a snack or appetizer.
Ingredients
- 2 cups fresh broccoli florets, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons olive oil (for frying)
Instructions
- In a large pot, bring water to a boil and add the chopped broccoli. Blanch for 2-3 minutes until bright green and tender. Drain and cool under cold water. Squeeze out excess water and chop finely.
- In a mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
- Form the mixture into small patties, about 2-3 inches in diameter. You should get around 10-12 patties.
- Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side until golden brown and crispy.
- Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm.
Notes
- For a gluten-free version, substitute breadcrumbs with almond flour or gluten-free breadcrumbs.
- Add finely chopped onions or bell peppers to the mixture for extra flavor and texture.
