Description

Delicious and crispy broccoli cheese patties that are perfect as a snack or appetizer.


Ingredients

  • 2 cups fresh broccoli florets, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large pot, bring water to a boil and add the chopped broccoli. Blanch for 2-3 minutes until bright green and tender. Drain and cool under cold water. Squeeze out excess water and chop finely.
  2. In a mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, salt, black pepper, and red pepper flakes. Mix until well combined.
  3. Form the mixture into small patties, about 2-3 inches in diameter. You should get around 10-12 patties.
  4. Heat olive oil in a large skillet over medium heat. Once hot, add the patties in batches, being careful not to overcrowd the pan. Cook for 3-4 minutes on each side until golden brown and crispy.
  5. Remove the patties from the skillet and place them on a paper towel-lined plate to absorb excess oil. Serve warm.

Notes

  • For a gluten-free version, substitute breadcrumbs with almond flour or gluten-free breadcrumbs.
