Ingredients
- 2 cups fresh broccoli florets, chopped
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1/4 cup finely chopped onion
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1 tablespoon olive oil (for frying)
Instructions
- In a large pot, bring water to a boil. Add the chopped broccoli and blanch for 2-3 minutes until bright green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and chop finely.
- In a mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, onion, garlic powder, salt, black pepper, and paprika. Mix until well combined.
- Heat olive oil in a large skillet over medium heat.
- Form the broccoli mixture into small patties, about 2-3 inches in diameter. Carefully place the patties in the skillet, cooking in batches if necessary.
- Cook each patty for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
- Serve warm, either on their own or with your favorite dipping sauce.

- For a gluten-free option, substitute breadcrumbs with crushed gluten-free crackers or almond flour.
- Add chopped cooked bacon or diced bell peppers to the mixture for extra flavor and texture.
