Description

Broccoli Cheese Patties are a delicious and nutritious snack or side dish made with fresh broccoli, cheese, and spices, perfect for any meal.


Ingredients

  • 2 cups fresh broccoli florets, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup finely chopped onion
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon olive oil (for frying)

Instructions

  1. In a large pot, bring water to a boil. Add the chopped broccoli and blanch for 2-3 minutes until bright green. Drain and immediately transfer to a bowl of ice water to stop the cooking process. Once cooled, drain again and chop finely.
  2. In a mixing bowl, combine the chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, onion, garlic powder, salt, black pepper, and paprika. Mix until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Form the broccoli mixture into small patties, about 2-3 inches in diameter. Carefully place the patties in the skillet, cooking in batches if necessary.
  5. Cook each patty for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and place on a paper towel-lined plate to absorb excess oil.
  6. Serve warm, either on their own or with your favorite dipping sauce.
