Ingredients

  • 2 cups fresh broccoli florets, chopped finely
  • 1 cup crumbled feta cheese
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a medium saucepan, bring water to a boil. Add the chopped broccoli and blanch for 2-3 minutes until bright green. Drain and set aside to cool.
  3. In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt. Whisk until well blended.
  4. In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.

  7. Pour the batter into the prepared baking pan and spread it evenly.
