Ingredients
- 2 cups fresh broccoli florets, chopped finely
- 1 cup crumbled feta cheese
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt

Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a medium saucepan, bring water to a boil. Add the chopped broccoli and blanch for 2-3 minutes until bright green. Drain and set aside to cool.
- In a large mixing bowl, combine the flour, cocoa powder, sugar, baking powder, and salt. Whisk until well blended.
- In another bowl, whisk together the vegetable oil, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Fold in the blanched broccoli, crumbled feta, and walnuts (if using) until evenly distributed.
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Allow the brownies to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and serve.
