Description
A decadent Brownie Cookie Dough Cake that combines rich brownie layers with delicious cookie dough frosting.
Ingredients
- 2 cups all-purpose flour
- 1 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 1 cup packed brown sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
- For the Cookie Dough Frosting:
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour (heat-treated)
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
- 2–3 tablespoons milk (as needed for consistency)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In a large bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the chocolate chips.
- Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
- For the cookie dough frosting, beat together the softened butter, brown sugar, and granulated sugar until smooth. Mix in the vanilla extract.
- Gradually add the heat-treated flour and salt, mixing until combined. Stir in the mini chocolate chips. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.
- Once the cakes are completely cool, place one layer on a serving plate. Spread a generous amount of cookie dough frosting on top. Place the second layer on top and frost the top and sides of the cake with the remaining cookie dough frosting.
- Serve immediately or refrigerate for up to 2 hours to set the frosting before slicing.
Notes
- For a richer flavor, try adding a tablespoon of espresso powder to the brownie batter.
- You can substitute the semi-sweet chocolate chips with dark chocolate chips for a more intense chocolate taste.
- For a fun twist, add chopped nuts or sprinkles to the frosting for added texture and color.
