Description

This creamy, spicy Buffalo Chicken Pasta is a one-pot wonder that brings together tender chicken, tangy buffalo sauce, and melty cheese for the ultimate comfort meal. Perfect for busy nights when you need a satisfying and flavorful dish!

Ingredients

  • Chicken – 1 lb boneless, skinless chicken breasts (cubed)
  • Oil – 1 tbsp vegetable or olive oil
  • Garlic – 1 tbsp minced garlic (or ½ tsp garlic powder)
  • Chicken Broth – 2 cups
  • Water – 1 ½ cups
  • Buffalo Sauce – ⅓ cup (adjust to taste)
  • Pasta – 8 oz dry penne (or ziti/rotini)
  • Cream Cheese – 4 oz, softened
  • Shredded Cheese – ½ cup medium or sharp cheddar
  • Toppings (Optional) – Sliced green onions, ranch dressing, extra buffalo sauce

Instructions

  1. Sear the Chicken – Heat oil in a large skillet over medium heat. Add cubed chicken and minced garlic, sautéing until the chicken is browned on all sides.
  2. Build the Base – Pour in chicken broth, water, buffalo sauce, and dry pasta. Stir and bring the mixture to a boil.
  3. Let It Simmer – Reduce to medium-low heat and let it cook for about 15 minutes, stirring occasionally, until the pasta is tender.
  4. Creamy Perfection – Stir in softened cream cheese until smooth and fully incorporated.
  5. Cheesy Finish – Sprinkle shredded cheddar cheese over the top, cover for 2 minutes, and let it melt.
  6. Garnish & Serve – Top with green onions, a drizzle of ranch or extra buffalo sauce, and enjoy warm!

Notes

  • Adjust buffalo sauce for milder or spicier heat.
  • Substitute cream cheese with Greek yogurt for a lighter version.
  • Use whole wheat or gluten-free pasta to fit dietary preferences.
