Description
Buffalo Chicken Pinwheels are the perfect spicy, creamy, and cheesy appetizer or snack. These bite-sized wraps are bursting with buffalo flavor and make a crowd-pleasing addition to parties, game days, or lunch boxes. Easy to make ahead and packed with bold, tangy goodness!
Ingredients
3 to 4 large tortillas
8 oz cream cheese, softened
¼ cup ranch dressing
2 cups cooked shredded chicken
⅓ cup buffalo wing sauce
¾ cup finely shredded cheddar cheese
¼ cup blue cheese crumbles
1 tablespoon minced chives
Instructions
-
In a medium bowl, toss the cooked shredded chicken with buffalo wing sauce until evenly coated. Set aside.
-
In a separate bowl, stir together the softened cream cheese and ranch dressing until smooth and creamy.
-
Lay tortillas flat on a clean surface. Spread a layer of the cream cheese mixture over each tortilla, leaving a small border around the edges.
-
Evenly distribute the buffalo chicken over the cream cheese layer. Sprinkle with shredded cheddar, blue cheese crumbles, and minced chives.
-
Roll each tortilla up tightly into a log. Wrap each in plastic wrap and refrigerate for at least 1 hour to help them firm up.
-
Remove from the fridge, unwrap, and slice into 1½-inch pieces. Garnish with additional chives if desired. Serve chilled or at room temperature.
Notes
These pinwheels can be made a day in advance and stored in the fridge until ready to serve.
Substitute ranch dressing with blue cheese dressing for an even stronger flavor.
Use spinach or sun-dried tomato wraps for extra color and variety.
Great as party appetizers, lunchbox fillers, or light game day bites.
