Description

Buffalo Chicken Pinwheels are the perfect spicy, creamy, and cheesy appetizer or snack. These bite-sized wraps are bursting with buffalo flavor and make a crowd-pleasing addition to parties, game days, or lunch boxes. Easy to make ahead and packed with bold, tangy goodness!


Ingredients

3 to 4 large tortillas
8 oz cream cheese, softened
¼ cup ranch dressing
2 cups cooked shredded chicken
⅓ cup buffalo wing sauce
¾ cup finely shredded cheddar cheese
¼ cup blue cheese crumbles
1 tablespoon minced chives


Instructions

  1. In a medium bowl, toss the cooked shredded chicken with buffalo wing sauce until evenly coated. Set aside.

  2. In a separate bowl, stir together the softened cream cheese and ranch dressing until smooth and creamy.

  3. Lay tortillas flat on a clean surface. Spread a layer of the cream cheese mixture over each tortilla, leaving a small border around the edges.

  4. Evenly distribute the buffalo chicken over the cream cheese layer. Sprinkle with shredded cheddar, blue cheese crumbles, and minced chives.

  5. Roll each tortilla up tightly into a log. Wrap each in plastic wrap and refrigerate for at least 1 hour to help them firm up.

  6. Remove from the fridge, unwrap, and slice into 1½-inch pieces. Garnish with additional chives if desired. Serve chilled or at room temperature.

Notes

These pinwheels can be made a day in advance and stored in the fridge until ready to serve.
Substitute ranch dressing with blue cheese dressing for an even stronger flavor.
Use spinach or sun-dried tomato wraps for extra color and variety.
