Ingredients

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • For the frosting:

  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Then, mix in the buttermilk and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Fold in the toasted pecans gently with a spatula.
  6. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
