Instructions
- Preheat the oven to 325°F.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
- Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.

- Add the eggs one at a time, mixing well after each addition.
- Pour in the maple syrup and mix until fully incorporated.
- Fold in the chopped pecans and raisins.
- Pour the cheesecake filling over the cooled crust in the springform pan.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly.
- Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove from the oven and let cool to room temperature, then refrigerate for at least 4 hours or overnight before serving.
Notes
- For a richer flavor, try adding a teaspoon of cinnamon to the filling.
- You can substitute the pecans with walnuts or omit the raisins for a different texture.
- For a festive touch, drizzle additional maple syrup over the top before serving.
