Delicious Butterfinger Caramel Cheesecake Bars with a creamy filling and a crunchy graham cracker crust.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 2 (8-ounce) packages cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 cup caramel sauce, divided
  • 1 cup Butterfinger candy bars, chopped (about 45 bars)

Instructions

  1. Preheat the oven to 325°F. Grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are well coated. Press the mixture firmly into the bottom of the prepared baking dish to form a crust.
  3. In a large mixing bowl, beat the softened cream cheese and ¾ cup of sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully incorporated.
  4. Fold in ½ cup of the caramel sauce and the chopped Butterfinger candy bars into the cream cheese mixture. Pour the filling over the prepared crust and spread it evenly.
  5. Drizzle the remaining ½ cup of caramel sauce over the top of the cheesecake filling. Use a knife or toothpick to swirl the caramel into the cheesecake for a marbled effect.
  6. Bake in the preheated oven for 35-40 minutes, or until the center is set and the edges are lightly golden. Remove from the oven and let cool at room temperature for about 1 hour. Then, refrigerate for at least 4 hours, or overnight for best results.
  7. Once chilled, cut into bars and serve.
