Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (5.1 oz) package instant butterscotch pudding mix
  • 2 cups cold milk
  • 1 (8 oz) container whipped topping, thawed
  • 1/2 cup butterscotch sauce, plus extra for drizzling
  • 1/2 cup chopped pecans (optional)
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool completely.
  3. In another bowl, whisk together the instant butterscotch pudding mix and cold milk for about 2 minutes until thickened.
  4. Fold in the whipped topping, butterscotch sauce, and vanilla extract until well combined.
  5. Pour the butterscotch mixture into the cooled crust, smoothing the top with a spatula.
  6. If using, sprinkle chopped pecans on top. Drizzle additional butterscotch sauce over the pie.
  7. Refrigerate for at least 4 hours or overnight to allow the pie to set properly.
  8. Slice and serve chilled, drizzling more butterscotch sauce on individual servings if desired.
