Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 (5.1 oz) package instant butterscotch pudding mix
- 2 cups cold milk
- 1 (8 oz) container whipped topping, thawed
- 1/2 cup butterscotch sauce, plus extra for drizzling
- 1/2 cup chopped pecans (optional)
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes or until lightly golden. Remove from the oven and let cool completely.
- In another bowl, whisk together the instant butterscotch pudding mix and cold milk for about 2 minutes until thickened.
- Fold in the whipped topping, butterscotch sauce, and vanilla extract until well combined.
- Pour the butterscotch mixture into the cooled crust, smoothing the top with a spatula.
- If using, sprinkle chopped pecans on top. Drizzle additional butterscotch sauce over the pie.
- Refrigerate for at least 4 hours or overnight to allow the pie to set properly.
- Slice and serve chilled, drizzling more butterscotch sauce on individual servings if desired.

- For a chocolate twist, use chocolate pudding mix instead of butterscotch and top with chocolate shavings.
