Buttery Apple Pie Bars with a Flaky Crust are irresistible!


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 cup unsalted butter, chilled and cut into cubes
  • 6 to 8 tablespoons ice water
  • 4 cups apples, peeled, cored, and thinly sliced (about 4 medium apples)
  • 3/4 cup brown sugar, packed
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • Granulated sugar for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large bowl, combine the flour, salt, and sugar. Add the chilled butter and mix with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In another bowl, toss the sliced apples with brown sugar, cinnamon, nutmeg, lemon juice, cornstarch, and vanilla extract. Set aside to let the flavors meld.
  5. Roll out one disk of dough on a floured surface to fit the bottom of the prepared baking dish. Place the rolled dough in the dish and press it down gently.
  6. Pour the apple mixture over the crust, spreading it evenly.
  7. Roll out the second disk of dough and place it over the apple filling. Trim any excess dough and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
  8. Brush the top crust with the beaten egg and sprinkle with granulated sugar.
  9. Bake for 45-50 minutes, or until the crust is golden brown and the apples are bubbly. Let cool in the pan for at least 30 minutes before slicing into bars.

Notes

  • For a richer flavor, add a tablespoon of caramel sauce to the apple mixture before baking.
