Description
A quick and delicious Cabbage and Beef Skillet recipe that combines ground beef, cabbage, and spices for a hearty meal.
Ingredients
- 1 small head of green cabbage, chopped (about 6 cups)
- 1 pound ground beef or turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- Fresh cilantro, chopped (for garnish)
- Sour cream (optional, for serving)
- Tortilla chips (optional, for serving)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Increase the heat to medium-high and add the ground beef or turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat if necessary.
- Stir in the chopped cabbage, black beans, diced tomatoes, chili powder, cumin, paprika, salt, and pepper. Mix well to combine.
- Cover the skillet and reduce the heat to medium-low. Cook for 10-15 minutes, stirring occasionally, until the cabbage is tender.
- Remove the lid and sprinkle the shredded cheddar cheese over the top. Cover again for 2-3 minutes until the cheese is melted.
- Serve hot, garnished with fresh cilantro and optional sour cream or tortilla chips on the side.
Notes
- For a spicier version, add diced jalapeños or a dash of hot sauce during cooking.
- To make it vegetarian, substitute the ground meat with additional beans or lentils.
