Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, chopped
  • 2 medium potatoes, peeled and diced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 1 cup carrots, diced
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the chopped cabbage and diced potatoes to the pot, stirring to combine.
  4. Pour in the vegetable broth and add the dried thyme, salt, black pepper, and bay leaf. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
  6. Add the diced carrots and continue to simmer for another 10 minutes.
  7. Remove the bay leaf, stir in the lemon juice, and adjust seasoning if needed.
  8. Serve hot, garnished with fresh parsley.
