Description
A cozy and hearty Cabbage and Potato Soup that is perfect for chilly days.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups green cabbage, chopped
- 2 medium potatoes, peeled and diced
- 4 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 cup carrots, diced
- 1 tablespoon lemon juice
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until it becomes translucent.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the chopped cabbage and diced potatoes to the pot, stirring to combine.
- Pour in the vegetable broth and add the dried thyme, salt, black pepper, and bay leaf. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let it simmer for 20 minutes, or until the potatoes are tender.
- Add the diced carrots and continue to simmer for another 10 minutes.
- Remove the bay leaf, stir in the lemon juice, and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
Notes
- For a heartier soup, add cooked sausage or bacon for extra flavor.
- You can substitute kale or spinach for the cabbage for a different taste and texture.
