Description

Cabbage Lasagna is a low-carb alternative to traditional lasagna, using cabbage leaves instead of pasta for a delicious and healthy meal.


Ingredients

  • 1 head of green cabbage
  • 1 pound ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 ounces) marinara sauce (sugar-free if desired)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 15 ounces ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg

Instructions

  1. Preheat the oven to 375°F.
  2. Remove the core from the cabbage and carefully separate the leaves. Blanch the leaves in boiling water for 2-3 minutes until softened. Drain and set aside.
  3. In a large skillet over medium heat, cook the ground beef or turkey with the diced onion and minced garlic until the meat is browned and the onion is translucent. Drain excess fat if necessary. Stir in the marinara sauce, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  4. In a bowl, combine the ricotta cheese, egg, and half of the Parmesan cheese. Mix until smooth.
  5. Spread a thin layer of the meat sauce on the bottom of a 9×13 inch baking dish. Layer 3-4 cabbage leaves over the sauce. Spread half of the ricotta mixture over the cabbage, followed by a layer of meat sauce. Repeat the layers, finishing with cabbage leaves and the remaining meat sauce on top. Sprinkle with mozzarella cheese and the rest of the Parmesan cheese.
  6. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  7. Let the lasagna cool for 10 minutes before slicing and serving.

Notes

  • For a vegetarian option, substitute the meat with sautéed mushrooms and spinach.
