Ingredients

Instructions
- Cook the Sausage:
- Heat vegetable oil in a large pot over medium heat.
- Add the sliced andouille sausage and cook for 3–4 minutes, stirring occasionally, until browned.
- Remove the sausage and set aside.
- Sauté the Vegetables:
- In the same pot, add the diced onion, celery, and red bell pepper.
- Cook for 5–8 minutes, stirring occasionally, until softened.
- Add minced garlic and cook for 1 more minute, stirring to combine.
- Build the Soup Base:
- Stir in Cajun seasoning, kosher salt, black pepper, paprika, and cayenne pepper (if using).
- Pour in the chicken broth and add the cubed potatoes.
- Reduce the heat to low and simmer for 20–25 minutes, or until the potatoes are tender.
- Add Cream and Cheese:
- Return the browned sausage to the pot.
- Stir in heavy whipping cream and shredded cheddar cheese.
- Simmer for an additional 5 minutes, stirring occasionally, until the cheese melts and the soup is creamy.
- Serve and Garnish:
- Ladle the soup into bowls.
