Description

Cannoli Pancakes are a delicious twist on traditional pancakes, incorporating the flavors of classic cannoli into a breakfast treat.


Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 1/2 cups whole milk
  • 1 teaspoon vanilla extract
  • 1/2 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup powdered sugar (for dusting)
  • 1/2 teaspoon ground cinnamon (optional)
  • Butter or oil (for cooking)

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. In another bowl, beat the eggs, then add the milk and vanilla extract. Mix until smooth.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Gently fold in the ricotta cheese and mini chocolate chips until evenly distributed.
  5. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.
  6. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
  7. Remove pancakes from the skillet and keep warm while you cook the remaining batter.
  8. Serve pancakes warm, dusted with powdered sugar and a sprinkle of cinnamon if desired.

Notes

  • For a lighter version, substitute half of the all-purpose flour with whole wheat flour.
