Description
Cannoli Pancakes are a delicious twist on traditional pancakes, incorporating the flavors of classic cannoli into a breakfast treat.
Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups whole milk
- 1 teaspoon vanilla extract
- 1/2 cup ricotta cheese
- 1/2 cup mini chocolate chips
- 1/4 cup powdered sugar (for dusting)
- 1/2 teaspoon ground cinnamon (optional)
- Butter or oil (for cooking)
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
- In another bowl, beat the eggs, then add the milk and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Gently fold in the ricotta cheese and mini chocolate chips until evenly distributed.
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil to coat the surface.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook for another 2-3 minutes until golden brown.
- Remove pancakes from the skillet and keep warm while you cook the remaining batter.
- Serve pancakes warm, dusted with powdered sugar and a sprinkle of cinnamon if desired.
Notes
- For a lighter version, substitute half of the all-purpose flour with whole wheat flour.
- Add a splash of orange zest to the batter for a classic cannoli flavor twist.
