These delightful caramel apple muffins are perfect for breakfast or a sweet snack.
Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, melted
- 1 cup buttermilk
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups peeled and diced apples (about 2 medium apples)
- 1/2 cup caramel sauce (plus extra for drizzling)
- 1/2 cup chopped pecans or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Mix well until combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apples, caramel sauce, and nuts if using.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Drizzle with extra caramel sauce before serving.
Notes
- For a lighter version, substitute half of the all-purpose flour with whole wheat flour.
- You can also add a pinch of sea salt on top of the muffins before baking for an extra flavor boost.
