Description

These delightful caramel apple muffins are perfect for breakfast or a sweet snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples (about 2 medium apples)
  • 1/2 cup caramel sauce (plus extra for drizzling)
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, combine the melted butter, buttermilk, eggs, and vanilla extract. Mix well until combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples, caramel sauce, and nuts if using.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack. Drizzle with extra caramel sauce before serving.

Notes

  • For a lighter version, substitute half of the all-purpose flour with whole wheat flour.
  • You can also add a pinch of sea salt on top of the muffins before baking for an extra flavor boost.
