Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 16 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 ripe bananas, mashed
- ½ cup sour cream
- ½ cup caramel sauce (store-bought or homemade)
- 1 teaspoon lemon juice
- Whipped cream (for topping, optional)
- Sliced bananas (for garnish, optional)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan with cooking spray or butter.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined. Press the mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add 1 cup of sugar and continue to beat until well combined.
- Add the vanilla extract, eggs (one at a time), mashed bananas, sour cream, and lemon juice to the cream cheese mixture. Beat until everything is well incorporated and smooth.
- Pour the cheesecake batter over the cooled crust in the springform pan. Drizzle the caramel sauce over the top of the batter and use a knife or skewer to swirl it gently into the cheesecake.
- Bake in the preheated oven for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour to cool gradually.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight for best results.
- Before serving, top with whipped cream and sliced bananas if desired. Drizzle additional caramel sauce over the top for extra sweetness.
Notes
- For a chocolate twist, add ½ cup of cocoa powder to the cheesecake batter or use chocolate graham crackers for the crust.
- To make it a no-bake cheesecake, substitute the eggs with 1 cup of whipped heavy cream folded into the cream cheese mixture, and chill until set.
