Description

Caramel Banana Pecan Cake is a deliciously moist cake made with ripe bananas, pecans, and drizzled with caramel sauce, perfect for any occasion.

Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1/2 cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract to the mixture, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  5. Fold in the chopped pecans.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. Once cooled, drizzle the caramel sauce over the top of the cake before serving.

Notes

  • For added flavor, try incorporating 1 teaspoon of cinnamon into the dry ingredients.
  • Substitute walnuts for pecans if you prefer a different nut flavor.
