Description

Indulge in this rich and creamy Caramel Crunch Cheesecake topped with toffee bits and drizzled with caramel sauce.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup caramel sauce, plus extra for drizzling
  • 1 cup toffee bits (such as Heath Bar bits)
  • Whipped cream, for topping (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until well combined.
  3. Press the crumb mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of sugar and vanilla extract, mixing until well combined.
  6. Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.
  7. Stir in the sour cream and 1 cup of caramel sauce until smooth.
  8. Fold in the toffee bits gently, reserving a few for topping.
  9. Pour the cheesecake batter over the cooled crust in the springform pan.
  10. Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
  11. Remove the cheesecake from the oven and let it cool to room temperature. Refrigerate for at least 4 hours, preferably overnight.
  12. Before serving, drizzle additional caramel sauce on top and sprinkle with reserved toffee bits. Optionally, add whipped cream.

Notes

  • For a chocolate twist, add ½ cup of cocoa powder to the cream cheese mixture.
  • To make it easier to slice, run a knife under hot water before cutting each piece.
