Description
A delightful Caramel Swirl Cake Roll that combines a light sponge cake with a rich caramel flavor, topped with whipped cream.
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1/2 cup caramel sauce (store-bought or homemade)
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract (for the cream)
Instructions
- Preheat the oven to 350°F. Grease a 15×10-inch jelly roll pan and line it with parchment paper, then grease the parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the eggs and granulated sugar together until light and fluffy, about 3-4 minutes. Add the vanilla extract, milk, and vegetable oil, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Pour the batter into the prepared pan and spread it evenly.
- Drizzle half of the caramel sauce over the batter and use a knife to swirl it gently into the batter. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- While the cake is baking, prepare a clean kitchen towel by dusting it with powdered sugar. Once the cake is done, immediately invert it onto the prepared towel. Carefully peel off the parchment paper.
- Starting from one short end, roll the cake up with the towel inside. Allow it to cool completely, about 30 minutes.
- In a medium bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form. Unroll the cooled cake and spread the whipped cream evenly over the surface. Drizzle the remaining caramel sauce on top of the whipped cream.
- Roll the cake back up without the towel, then place it seam-side down on a serving platter. Refrigerate for at least 1 hour before slicing.
Notes
- For a richer flavor, try adding a teaspoon of espresso powder to the cake batter.
- You can also substitute the caramel sauce with chocolate ganache for a different twist.
