Description

Ingredients

  • 8 ounces cremini or button mushrooms, sliced
  • 1 large yellow onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. In a large skillet, heat the olive oil and butter over medium heat until melted and hot.
  2. Add the sliced onions and salt to the skillet. Cook, stirring occasionally, for about 10 minutes until the onions start to soften.
  3. Add the sliced mushrooms and black pepper to the skillet. Stir to combine and continue cooking for another 15-20 minutes, stirring occasionally, until the mushrooms and onions are deeply caramelized and golden brown.
  4. If using, stir in the balsamic vinegar and thyme, cooking for an additional 2-3 minutes until the vinegar has evaporated and the mixture is well combined.
  5. Remove from heat and serve warm as a side dish, topping for burgers, or as a filling for sandwiches.

Notes

  • For a richer flavor, add a splash of white wine during the cooking process after adding the mushrooms.
  • Try adding a pinch of red pepper flakes for a little heat or a sprinkle of grated Parmesan cheese for extra flavor before serving.
