  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10 minutes until they start to soften.
  3. Sprinkle the sugar over the onions and continue to cook for an additional 15-20 minutes, stirring frequently, until the onions are deeply caramelized and golden brown. Stir in the balsamic vinegar and season with salt and pepper. Remove from heat and let cool slightly.
  4. While the onions are cooling, roll out the puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into 4 equal squares and place them on a baking sheet lined with parchment paper.
  5. Spread a layer of goat cheese on each pastry square, leaving a small border around the edges. Top with the caramelized onions and sprinkle with fresh thyme.
  6. Brush the edges of the pastry with the beaten egg for a golden finish.
