A delicious recipe for Caramelized Onion and Goat Cheese Tarts, perfect for appetizers or a light meal.
Ingredients
- 1 tablespoon olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1 teaspoon balsamic vinegar
- 1 sheet puff pastry, thawed
- 4 ounces goat cheese, softened
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, for about 10 minutes until they start to soften.
- Sprinkle the sugar over the onions and continue to cook for an additional 15-20 minutes, stirring frequently, until the onions are deeply caramelized and golden brown. Stir in the balsamic vinegar and season with salt and pepper. Remove from heat and let cool slightly.
- While the onions are cooling, roll out the puff pastry on a lightly floured surface to smooth out creases. Cut the pastry into 4 equal squares and place them on a baking sheet lined with parchment paper.
- Spread a layer of goat cheese on each pastry square, leaving a small border around the edges. Top with the caramelized onions and sprinkle with fresh thyme.
- Brush the edges of the pastry with the beaten egg for a golden finish.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is puffed and golden brown.
- Let cool slightly before serving.
Notes
- To enhance the flavor, try adding a sprinkle of red pepper flakes for a bit of heat.
- For a variation, substitute the goat cheese with feta or cream cheese for a different taste profile.
