Ingredients
- 2 large carrots, grated
- 1 large apple, cored and diced (preferably a sweet variety like Fuji or Honeycrisp)
- 1/4 cup raisins
- 1/4 cup chopped walnuts (optional)
- 1/4 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
Instructions
- In a large bowl, combine the grated carrots, diced apple, raisins, and chopped walnuts if using.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, cinnamon, salt, and pepper until smooth.
