Ingredients

For the Oat Base:

  • 4 cups old-fashioned rolled oats, divided
  • 1 ½ teaspoons cinnamon
  • 1 ½ teaspoons baking soda
  • ½ teaspoon salt

For Moisture & Sweetness:

  • ¾ cup pulp-free orange juice
  • ¾ cup applesauce
  • ¾ cup maple syrup

For Binding & Flavor:

  • 2 large eggs
  • 3 tablespoons olive oil or avocado oil
  • 2 teaspoons vanilla extract

The Star Ingredients:

  • 1 ½ cups shredded carrots
  • ¾ cup raisins

For Toppings:

Instructions

 

  1. Preheat & Prep:

    • Preheat oven to 350°F (175°C).
    • Grease three 6-inch cake pans with cooking spray or coconut oil.
  2. Blend the Oat Mixture:

    • In a high-powered blender, add 2 ½ cups oats, cinnamon, baking soda, salt, orange juice, applesauce, maple syrup, eggs, oil, and vanilla extract.
    • Blend until smooth.
  3. Fold in the Carrots & Raisins:

    • Transfer the blended mixture to a large bowl.
    • Stir in the remaining 1 ½ cups oats, shredded carrots, and raisins until evenly combined.
  4. Bake to Perfection:

    • Divide the batter evenly among the prepared cake pans.
    • Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool & Frost:

    • Let the cakes cool for 10 minutes before transferring them to a wire rack to cool completely.
    • Once cooled, spread with cream cheese frosting and sprinkle with chopped walnuts, if desired.
