Ingredients

  • 2 cups cooked seafood mix (shrimp, crab, and scallops)
  • 1 cup frozen peas and carrots
  • 1 cup diced potatoes (cooked)
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 package (8.5 oz) Cheddar Bay Biscuit mix
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 400°F.
  2. In a large skillet over medium heat, melt the butter.
  3. Add the diced onion and celery, cooking until softened, about 5 minutes.
  4. Stir in the flour and cook for 1 minute.
  5. Gradually whisk in the seafood stock and heavy cream, bringing the mixture to a simmer.
  6. Add the garlic powder, dried thyme, salt, and pepper.
  7. Stir in the cooked seafood, peas and carrots, and diced potatoes. Cook for an additional 5 minutes until the mixture thickens slightly.
  8. Transfer the seafood mixture into a 9-inch pie dish.
  9. In a separate bowl, prepare the Cheddar Bay Biscuit mix according to package instructions, adding the shredded cheddar cheese and milk.
