Description
A delicious and savory pie made with Vidalia onions, sharp cheddar cheese, and a crunchy Ritz cracker crust.
Ingredients
- 2 tablespoons unsalted butter
- 3 cups Vidalia onions, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1 cup shredded sharp cheddar cheese
- 1 cup sour cream
- 3 large eggs
- 1 cup crushed Ritz crackers (about 2 sleeves)
- 1/4 cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F.
- In a large skillet, melt the butter over medium heat. Add the sliced Vidalia onions and salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the cooked onions, black pepper, garlic powder, dried thyme, cheddar cheese, sour cream, and eggs. Mix until well combined.
- In a separate bowl, combine the crushed Ritz crackers and grated Parmesan cheese. Spread half of the cracker mixture evenly on the bottom of a greased 9-inch pie dish.
- Pour the onion and cheese mixture over the cracker crust, spreading it evenly. Top with the remaining crushed cracker mixture.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the filling is set. Let cool for 10 minutes before slicing.
Notes
- For a twist, try adding cooked bacon or diced ham for extra flavor.
- You can also substitute the cheddar cheese with pepper jack for a spicy kick.
