Cheddar Zucchini Bread is a delicious twist on traditional bread, combining the flavors of sharp cheddar cheese and fresh zucchini for a moist and flavorful loaf.
Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup shredded sharp cheddar cheese
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 large eggs
- ½ cup vegetable oil
- ½ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon black pepper
- ¼ cup chopped fresh chives (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, combine the grated zucchini and shredded cheddar cheese. Set aside to allow the zucchini to release some moisture.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, onion powder, and black pepper.
- In a separate mixing bowl, beat the eggs, then add the vegetable oil, sugar, and vanilla extract. Mix until well combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Do not overmix.
- Fold in the zucchini and cheese mixture, along with the chopped chives if using, until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a spicier kick, add ½ teaspoon of red pepper flakes or diced jalapeños to the batter.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
