Ingredients
- Large strawberries: 18-24, washed and dried
- Heavy whipping cream: 1 cup
- Cream cheese, softened: 8 oz (1 package)
- Sour cream: 1/3 cup
- White granulated sugar: 2/3 cup
- Vanilla extract: 1 tsp
- Lemon juice (optional): 1 tbsp
- Graham cracker crumbs: 1/2 cup
Optional Strawberry Shortcake Crumble:
- Golden Oreos, crushed: 1 pack
- Melted butter: 3 tbsp
- Strawberry gelatin mix: 1 packet (3 oz)
- Freeze-dried strawberries, crushed: 1/2 cup
Instructions
- Prepare the Strawberries
- Wash and dry the strawberries thoroughly.
- Cut off the stems and slice each strawberry in half lengthwise.
- Trim a small sliver off the back of each half so they lay flat.
- Use a melon baller or small spoon to carefully hollow out the centers.
- Whip the Cream
- In a medium bowl, beat the heavy whipping cream with a hand mixer until stiff peaks form.
- Set aside.
- Make the Cheesecake Filling
- In another bowl, blend the softened cream cheese, sour cream, granulated sugar, vanilla extract, and lemon juice (if using) until smooth.
- Fold the whipped cream into the cheesecake mixture until combined.
- Fill the Strawberries
- Transfer the cheesecake filling into a piping bag with a star tip.
- Pipe the filling into the hollowed strawberries.
- Sprinkle graham cracker crumbs on top.
- Optional: Make the Shortcake Crumble
- Preheat oven to 350°F (175°C).
- Mix crushed Golden Oreos, melted butter, strawberry gelatin mix, and freeze-dried strawberries.
- Spread on a baking sheet and bake for 7-10 minutes. Cool before using
