Delicious cheesecake stuffed cookies with a crunchy strawberry twist that everyone will love!
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1/2 teaspoon vanilla extract (for filling)
- 1 cup crushed strawberry cereal (like Strawberry Crunch)
- 1/2 cup fresh strawberries, diced
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- In another bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- To assemble the cookies, take a tablespoon of cookie dough and flatten it in your palm. Place a teaspoon of the cream cheese filling in the center, then wrap the dough around the filling and roll it into a ball.
- Roll the stuffed cookie dough ball in the crushed strawberry cereal until fully coated. Place on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
- For a chocolate twist, substitute half of the flour with cocoa powder and add chocolate chips to the cookie dough.
- For a more fruity flavor, mix in additional diced strawberries into the cream cheese filling.
