Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)
  • 1 cup crushed strawberry cereal (like Strawberry Crunch)
  • 1/2 cup fresh strawberries, diced

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In another bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  7. To assemble the cookies, take a tablespoon of cookie dough and flatten it in your palm. Place a teaspoon of the cream cheese filling in the center, then wrap the dough around the filling and roll it into a ball.
  8. Roll the stuffed cookie dough ball in the crushed strawberry cereal until fully coated. Place on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 12-15 minutes, or until the edges are lightly golden. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
