Description
Cheesy Baked Vegetable Rolls are a delicious and healthy dish made with a variety of vegetables and cheeses, wrapped in whole wheat tortillas and baked to perfection.
Ingredients
- 1 cup shredded cheddar cheese
- 1 cup cottage cheese
- 1 cup chopped kale (fresh or frozen, thawed and drained)
- 1 cup diced tomatoes
- 1 cup finely chopped onions
- 1 cup grated carrots (squeeze out excess moisture)
- 1 teaspoon paprika
- 1 teaspoon dried basil
- 1 teaspoon garlic salt
- Salt and pepper to taste
- 8 large whole wheat tortillas
- 1 cup salsa (for dipping)
- 1 tablespoon avocado oil
Instructions
- Preheat your oven to 375°F.
- In a large bowl, mix together the cheddar cheese, cottage cheese, kale, tomatoes, onions, carrots, paprika, dried basil, garlic salt, and season with salt and pepper. Stir until everything is evenly blended.
- Take a whole wheat tortilla and lay it flat on a clean surface. Place approximately 1/3 cup of the cheesy vegetable mixture in the center of the tortilla. Roll it up tightly, tucking in the sides to keep the filling secure.
- Continue this process until all tortillas are filled and rolled.
- Arrange the filled tortillas seam-side down in a greased baking dish. Lightly drizzle the tops with avocado oil.
- Bake in the preheated oven for 20-25 minutes, or until the wraps are golden and crispy.
- Enjoy these warm with a side of salsa for dipping.

- Make sure to squeeze out excess moisture from the grated carrots to prevent sogginess.
