Description

Cheesy Baked Vegetable Rolls are a delicious and healthy dish made with a variety of vegetables and cheeses, wrapped in whole wheat tortillas and baked to perfection.


Ingredients

  • 1 cup shredded cheddar cheese
  • 1 cup cottage cheese
  • 1 cup chopped kale (fresh or frozen, thawed and drained)
  • 1 cup diced tomatoes
  • 1 cup finely chopped onions
  • 1 cup grated carrots (squeeze out excess moisture)
  • 1 teaspoon paprika
  • 1 teaspoon dried basil
  • 1 teaspoon garlic salt
  • Salt and pepper to taste
  • 8 large whole wheat tortillas
  • 1 cup salsa (for dipping)
  • 1 tablespoon avocado oil

Instructions

  1. Preheat your oven to 375°F.
  2. In a large bowl, mix together the cheddar cheese, cottage cheese, kale, tomatoes, onions, carrots, paprika, dried basil, garlic salt, and season with salt and pepper. Stir until everything is evenly blended.
  3. Take a whole wheat tortilla and lay it flat on a clean surface. Place approximately 1/3 cup of the cheesy vegetable mixture in the center of the tortilla. Roll it up tightly, tucking in the sides to keep the filling secure.
  4. Continue this process until all tortillas are filled and rolled.
  5. Arrange the filled tortillas seam-side down in a greased baking dish. Lightly drizzle the tops with avocado oil.
  6. Bake in the preheated oven for 20-25 minutes, or until the wraps are golden and crispy.
