Description

A delicious and easy recipe for a cheesy breakfast grilled cheese sandwich filled with eggs.


Ingredients

  • 4 slices of bread (your choice, such as sourdough or whole wheat)
  • 4 slices of cheddar cheese
  • 4 large eggs
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional: hot sauce or salsa for serving

Instructions

  1. Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.
  2. While the butter is melting, assemble the sandwiches by placing 2 slices of cheese between 2 slices of bread.
  3. Once the butter is melted and bubbling, place the assembled sandwich in the skillet. Cook for about 3-4 minutes until the bottom is golden brown.
  4. Carefully flip the sandwich and add the remaining tablespoon of butter to the skillet. Cook the other side for another 3-4 minutes until golden brown and the cheese is melted.
  5. While the sandwich is cooking, in a separate pan, crack the eggs and cook them to your preference (fried, scrambled, or poached). Season with salt and pepper.
  6. Once the sandwich is done, remove it from the skillet and cut it in half. Place the cooked eggs on one half of the sandwich and top with the other half.
  7. Serve immediately with hot sauce or salsa if desired.

  • For a twist, add sliced avocado or tomato inside the sandwich before grilling.
