Ingredients
- 1 cup all-purpose flour
- 1 cup cornmeal
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup shredded cheddar cheese
- 1 cup cooked broccoli florets, chopped
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 2 large eggs
Instructions
- Preheat your oven to 400°F (200°C). Grease a 9-inch square baking dish or line it with parchment paper.
- In a large bowl, combine the flour, cornmeal, baking powder, and salt. Mix well.
- Stir in the shredded cheddar cheese and chopped broccoli until evenly distributed.
- In another bowl, whisk together the buttermilk, vegetable oil, and eggs until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Pour the batter into the prepared baking dish and spread it evenly.
- Bake for 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
- Allow to cool for a few minutes before slicing and serving.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper or diced jalapeños to the batter.
