Ingredients

  • 1 pound ground beef
  • 1 small head of cabbage, chopped (about 4 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef, cooking until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the chopped cabbage, diced tomatoes, cooked rice, Italian seasoning, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the cabbage is slightly softened.
  5. In a large mixing bowl, combine the beef and cabbage mixture with 1 cup of shredded cheddar cheese and the sour cream. Mix well until everything is evenly combined.
  6. Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining 1 cup of shredded cheddar cheese.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
