Ingredients
- 1 pound ground beef
- 1 small head of cabbage, chopped (about 4 cups)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 cup cooked rice
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef, cooking until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the chopped cabbage, diced tomatoes, cooked rice, Italian seasoning, salt, and black pepper. Cook for an additional 5-7 minutes, stirring occasionally, until the cabbage is slightly softened.
- In a large mixing bowl, combine the beef and cabbage mixture with 1 cup of shredded cheddar cheese and the sour cream. Mix well until everything is evenly combined.
- Transfer the mixture to a greased 9×13-inch baking dish. Top with the remaining 1 cup of shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
- Let the casserole cool for 5-10 minutes before serving.

- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the beef mixture.
- You can substitute ground turkey or chicken for a leaner option.
