Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 small head of cabbage, chopped (about 4 cups)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup cooked rice (white or brown)
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
- Stir in the chopped cabbage, diced tomatoes (with juice), cooked rice, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the cabbage is tender.
- Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let the casserole cool for 5 minutes before serving.
Notes
- For added flavor, consider mixing in some cooked bacon or sausage with the beef.
- You can substitute the cheddar cheese with mozzarella or pepper jack for a different taste.
- If you prefer a spicier dish, add some crushed red pepper flakes or diced jalapeños to the mixture before baking.
