Description

A delightful and hearty casserole made with ground beef, cabbage, and cheese, perfect for a comforting dinner.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 small head of cabbage, chopped (about 4 cups)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup cooked rice (white or brown)
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, cooking until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
  4. Stir in the chopped cabbage, diced tomatoes (with juice), cooked rice, Italian seasoning, salt, and pepper. Cook for another 5-7 minutes, stirring occasionally, until the cabbage is tender.
  5. Transfer the mixture to a greased 9×13-inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let the casserole cool for 5 minutes before serving.

Notes

  • For added flavor, consider mixing in some cooked bacon or sausage with the beef.
  • You can substitute the cheddar cheese with mozzarella or pepper jack for a different taste.
  • If you prefer a spicier dish, add some crushed red pepper flakes or diced jalapeños to the mixture before baking.
