Ingredients

  • 2 cups cooked, shredded chicken breast
  • 2 cups fresh broccoli florets
  • 1 cup cauliflower rice
  • 1 cup shredded low-fat cheddar cheese
  • 1 cup low-sodium chicken broth
  • 1/2 cup plain Greek yogurt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup chopped green onions (optional for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked shredded chicken, broccoli florets, cauliflower rice, half of the cheddar cheese, chicken broth, Greek yogurt, garlic powder, onion powder, black pepper, and salt. Mix well until all ingredients are evenly coated.
  3. Lightly grease a 9×13-inch baking dish with olive oil. Pour the chicken mixture into the dish and spread it out evenly.
  4. Sprinkle the remaining cheddar cheese on top of the casserole.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  7. Let the casserole cool for a few minutes before serving. Garnish with chopped green onions if desired.
