Description
Cheesy Chicken and Broccoli Orzo is a comforting dish that combines tender chicken, broccoli, and orzo pasta in a creamy cheese sauce.
Ingredients
- 2 cups orzo pasta
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, diced
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 cups broccoli florets (fresh or frozen)
- 3 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup cream cheese
- 1/4 teaspoon red pepper flakes (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced chicken, garlic powder, onion powder, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.
- In the same pot, add the chicken broth and bring to a boil. Stir in the orzo and broccoli florets. Reduce heat to a simmer and cook for about 10-12 minutes, stirring occasionally, until the orzo is tender and the liquid is mostly absorbed.
- Return the cooked chicken to the pot. Stir in the cheddar cheese, Parmesan cheese, cream cheese, and red pepper flakes (if using). Mix until the cheeses are melted and everything is well combined.
- Taste and adjust seasoning with more salt and pepper if needed. Serve warm.
Notes
- For a lighter version, substitute half of the orzo with cauliflower rice.
- Add your favorite vegetables, such as bell peppers or spinach, for extra nutrition and flavor.
