This easy chicken casserole is pure cozy comfort in every bite. With tender shredded chicken, a creamy seasoned filling, melted cheese, and a buttery Ritz cracker topping, it’s a crowd-pleaser perfect for busy weeknights or potluck dinners.


Ingredients

3 cups shredded cooked chicken (rotisserie works great)
1 cup sour cream
1 can condensed cream of chicken soup (10.75 oz)
1/2 cup unsalted butter, melted (divided into two 1/4 cup portions)
2 teaspoons Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded Colby Jack cheese
1 sleeve Ritz crackers, crushed


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 3-quart casserole dish with non-stick spray.

  2. In a large bowl, mix together the shredded chicken, sour cream, cream of chicken soup, 1/4 cup melted butter, Italian seasoning, salt, pepper, and shredded cheese until well combined.

  3. Spread the mixture evenly into the prepared casserole dish.

  4. Sprinkle the crushed Ritz crackers over the top. Drizzle the remaining 1/4 cup of melted butter over the crackers.

  5. Bake uncovered for 25–30 minutes, or until the casserole is hot and bubbly with a golden, crispy topping.

  6. Let cool slightly before serving.

Notes

You can prep this dish ahead of time and refrigerate it unbaked for up to 24 hours.
Try adding sautéed mushrooms or steamed broccoli to the chicken mixture for a veggie boost.
For extra cheesiness, sprinkle a bit more shredded Colby Jack over the top before baking.
